Job Description / Role
Open Positions:
- Cold Kitchen Junior Sous Chef: Lead the Garde Manger section, overseeing salad preparation, cold appetizers, and buffet presentation.
- Chef de Partie (CDP): Manage a specific station (Saucier, Entremetier, etc.), ensuring all mise-en-place meets 5-star standards.
- Demi Chef de Partie: Assist the CDP in station management and lead junior commis during high-volume service periods.
- Butcher Chef: Responsible for the precision portioning of meats, poultry, and seafood, ensuring zero waste and optimal storage.
🔹 Key Responsibilities:
- Excellence in Execution: Prepare and present dishes according to Sheraton’s standardized recipes and premium presentation guidelines.
- Food Safety: Maintain strict adherence to HACCP and local Dubai Municipality food safety and hygiene regulations.
- Mise-en-Place: Ensure all stations are fully stocked and prepped ahead of service to maintain a seamless workflow.
- Team Collaboration: Work effectively within the brigade to ensure timely service during high-occupancy breakfast, lunch, and dinner periods.
- Quality Control: Monitor the quality of raw ingredients and final plated dishes to ensure 100% guest satisfaction.
- Waste Management: Implement efficient portion control and stock rotation (FIFO) to minimize kitchen food waste.
🔹 Requirements:
- Location: Candidates must be currently based in the UAE to facilitate immediate in-person trials.
- Education: Diploma/Degree/Certificate in Culinary Arts or relevant professional kitchen experience.
- Technical Skills: Deep understanding of professional cooking techniques, knife skills, and 5-star kitchen equipment.
- Availability: Immediate availability for a technical trial is essential for consideration.
- Attitude: Strong teamwork skills, high physical stamina, and a genuine passion for culinary excellence.
- Preference: Prior experience in a luxury hotel environment (Marriott/Sheraton background is a plus).
